Sicilian Easter Soup

Ingredients
1/2 pound ground beef
3 cups chicken broth
1 tablespoon chopped parsley
1 egg
1/3 cup bread crumbs
1/2 teaspoon salt
2 teaspoons grated Romano cheese
1/8 teaspoon pepper
1/4 cup water
1/4 teaspoon pepper
3 eggs
1 tablespoon grated cheese
1/2 pound ricotta
1 tablespoon parsley, chopped
Salt according to taste
Directions
Put broth and water into a large saucepan over medium heat. Then make a mixture of egg, ground beef, parsley, cheese, bread crumbs, salt, pepper and form into small meat balls. Drop these meat balls into the boiling broth. Let simmer for 45 minutes. In a small bowl, whip the eggs. Add the ricotta, cheese, salt and pepper to the bowl. Blend well. Then add the cheese and pepper mixture to the boiling soup. Simmer for 10 minutes longer. Your soup is ready.
